In macOS
System Settings › Sound and Control Center change the output for the whole Mac. Audio MIDI Setup can combine devices into a “Multi-Output Device”, but then every app plays on all of them; it can’t send one app to one device.

Frequently asked questions
Can two apps play on two devices at the same time?
Yes. Each app plays on the device you chose for it, at the same time: music can stay on your speakers while a call stays in your headphones.
What happens if the device is disconnected?
The app falls back to the system output and goes back to its device the next time it’s connected.
Which devices can I choose?
Any output macOS lists in Sound settings, including Bluetooth headphones, HDMI or DisplayPort monitors and USB audio interfaces.
